Gina Stanley is going into her 12th year as chef and owner of the famed ArtCliff Diner in Vineyard Haven. In the second of a series of conversations with chefs, The Times asked Ms. Stanley a few questions to get to know them better.

Erin: What’s your favorite ingredient to work with right now?

Gina: Olive oil.

What is your most memorable meal?

Dinner at the The French Laundry with my farmer friends Peter, Gwenny, and Basia.

What kitchen tool can’t you live/cook without?

Slotted fish spatula.

Where in the world would you like to travel in the name of food?

Of course Italy but I would love to go to Africa to experience new flavors.

What’s for dinner when you have less than 15 minutes to make it?

This time of year, Special K and oatmeal. Otherwise, I do love just cracking open a can of chickpeas, tossing them with olive oil, feta, red onion, and some good vinegar. Last but not least, pasta with the jarred tomato sauce from North Tabor Farms, awesome tomatoes!

La Choza to open

Seth Gambino is on par to open his new burrito shop, La Choza, on Leap Year Day, Feb. 29. All are welcome to stop by from 12 noon to 2 pm for the Grand Opening, and try some of the goods. It is located on Main Street in Vineyard Haven, near Brickman’s.
