What to make with carrots, Island Grown Schools’ Harvest of the Month

In December, Island Grown Schools celebrates carrots as the Harvest of the Month. These many-colored roots are full of Vitamin A to help vision, skin, and fight infection.

On Martha’s Vineyard, carrots are in season starting in late June through early winter. Carrots harvested in December, after several frosts, are sweeter. Pick up a local bunch and taste the difference. Try grating them to add to salads or cutting into matchsticks to pack into the lunch box.

Celebrate the fall bounty of New England with this Carrot, Cranberry and Apple slaw.

Carrot, Cranberry, and Apple Slaw

Ingredients:
4 large carrots, grated
1 large apple, diced
1/3 cup fresh cranberries, finely chopped
2 Tbs. lemon juice
2 Tbs. honey
1/3 cup raisins (optional)

Directions:
Kids: whisk to combine honey and lemon juice.
Kids and parents: grate carrots, dice apples and finely chop cranberries.
Kids: combine all ingredients and mix.
